Healthy Carrot Cake Bread – Delecious Recipe Ever
Ingredients
- cups quick oats*
- 2 tsp baking powder
- 1 tsp sea salt
- 2 tsp ground cinnamon
- ½ tsp ground ginger
- 2 large eggs
- 2/3 cup unsweetened applesauce
- ½ cup pure maple syrup
- 4 Tbsp avocado oil
- 2 tsp pure vanilla extract
- 2 cups grated carrots
- 2/3 cup unsweetened shredded coconut optional
- 2/3 cup raw pecans or walnuts chopped
- ½ cup raisins
Instructions
- Grate the big carrots using a box grater, sometimes called a cheese grater. 2 cups of grated carrot should be measured out and put aside. Heat the oven to 350 degrees Fahrenheit and place parchment paper inside a 9 by 5 inch loaf pan.
- Place the oats in a powerful food processor or blender and pulse for 60 seconds, or until a flour forms. To incorporate the remaining dry ingredients, add the baking powder, sea salt, ground ginger, and cinnamon to the blender. Blend for an additional few seconds.
- To a large bowl, add the eggs, applesauce, avocado oil, pure maple syrup, and pure vanilla extract. Mixing the wet ingredients thoroughly requires whisking them together.
- Once the wet ingredients are combined in the bowl, add the oat flour mixture and stir until a smooth batter is formed.
- To the mixing bowl, add the grated carrots, raisins, almonds, and shredded coconut. Stir until all the ingredients are well incorporated into the batter.
- Fill the loaf pan with the carrot cake bread batter, then cover it with aluminium foil. Bake for fifty minutes on the centre rack of a preheated oven. After taking the loaf pan out of the oven, bake the bread for a further 15 to 25 minutes, or until it is thoroughly done.
- As with meat, the better way to determine whether a loaf of bread is baked all the way through is to take its internal temperature. A digital thermometer should be inserted into the bread’s centre.
- When bread reaches an internal temperature of 190 degrees Fahrenheit, it is deemed fully cooked; however, the ideal texture occurs between 190 and 210 degrees Fahrenheit. Since numerous factors, such as height and oven calibration, affect the outcome, I appreciate using this tool instead of sticking to an exact bake time.
- Before slicing and serving, let the bread cool completely to room temperature. Although the bread can be sliced while still warm, it will crumble and not stay together as well. Therefore, I suggest waiting to slice the bread until it is no longer warm for optimal results.
