Agua Fresca de Pithaya (Dragon Fruit) Recipe

Hydrate with these drinks. Spanish for “fresh water,” agua fresca is sugar-sweetened water flavoured with fruit, vegetables, or seeds. 


– 2 lb pink- or white-flesh pithaya – 1 1/2 cups water – 1/4 cup lime juice – 2 tablespoons sugar – lime wheels, for garnish – ice cubes as needed



Split pithayas in half and remove the flesh with a spoon. In a blender, combine the pithaya meat, water, lime juice, and sugar until the mixture is completely smooth.

On top of ice, pour the drink, then garnish each glass with a lime wheel.
