Air Fryer Egg Rolls Recipe

As a popular Chinese restaurant appetiser, egg rolls may not seem like something you'd prepare at home. They're easy to create using store-bought egg roll wrappers. 

Ingredient

– 1 tablespoon neutral-flavored oil – ½ onion, diced – 2 cloves garlic, minced – 2 cups mushrooms, diced – 1 cup green cabbage, shredded – 8 ounces super firm tofu – 2 tablespoons soy sauce or tamari – 1 tablespoon rice vinegar – ½ teaspoon ginger powder – 20 egg roll wrapper – 4 scallions, chopped

Over medium heat, sauté onion, garlic, mushrooms, and cabbage in oil for 10 minutes.

Crumble tofu and mix with veggies, soy sauce, rice vinegar, and ginger powder.

Egg roll filling cooks for 5 minutes.Wet the egg roll wrapper edges one at a time.

Add 2 tablespoons of filling to the wrapper, fold the sides, and make the egg roll.

Apply extra water to the egg roll seam.Use leftover wrappers.Air cook egg rolls at 400 F for 12 minutes, flipping halfway.

They should be golden brown when done. You may need to work in batches depending on your air fryer size.

Sprinkle chopped scallions on egg rolls.Feel free to add more soy sauce or sour cream and Sriracha for dipping.
