– 12 slices whole wheat seeded bread– 1 (16-ounce) block super firm tofu– ½ cup dried cranberrie– ¼ cup red onion– ½ cup diced celery– ½ cup mayo– 2 tablespoons Dijon mustard– juice of 1 lemon– 1 teaspoon salt– ½ teaspoon pepper

Bread should be toasted.Crush the tofu with your hands in a uniform manner.

In a large bowl, mix crumbled tofu, dried cranberries, red onion, celery, mayo, mustard, lemon juice, salt, and pepper.
