Cranberry Tofu Salad Sandwich Recipe

Make Kristen Carli, MS, RD's healthy cranberry tofu salad sandwich for lunch. Cranberries and tofu provide a fresh, healthy twist to sandwich fillings in this dish.


– 12 slices whole wheat seeded bread – 1 (16-ounce) block super firm tofu – ½ cup dried cranberrie – ¼ cup red onion – ½ cup diced celery – ½ cup mayo – 2 tablespoons Dijon mustard – juice of 1 lemon – 1 teaspoon salt – ½ teaspoon pepper



Bread should be toasted.Crush the tofu with your hands in a uniform manner.

In a large bowl, mix crumbled tofu, dried cranberries, red onion, celery, mayo, mustard, lemon juice, salt, and pepper.
