Crispy Onion Bhajis Recipe For Easter Day 2024

Herbs and spices enliven these onion-only Indian fritters. Yogurt and mint sauce go nicely with shallow-fried, crispy foods. Serving canapés or nibbles.  

  – 110g (3/4 cup) chickpea flour – 1 tsp ground cumin – 1 tsp ground turmeric – 1/2 tsp baking powder – 185ml (3/4 cup) chilled soda water – 2 tbsp chopped fresh coriander leave – 2 brown onions, halved, thinly sliced – Vegetable oil, to shallow-fry – 260g (1 cup) Greek-style yoghurt – 1/4 cup fresh mint leaves, plus extra, to serve – 2 tsp fresh lemon juice

Step 1

Mix 110g (3/4 cup) chickpea flour, 1 tsp ground cumin, turmeric, and 1/2 tsp baking powder in a bowl. Season.

Step 2

 Mix 185ml (3/4 cup) chilled soda water and 2 tbsp chopped fresh coriander leaves. Mix with 2 thinly sliced, halved brown onions.

Shallow-fry in a medium non-stick pan with vegetable oil 3cm high. Cook heaping tablespoons of onion mixture for 2 minutes per side in batches to make crisp bhajis. Drain on paper towel-lined plate.

Meanwhile, place 260g (1 cup) Greek-style yoghurt, 1/4 cup fresh mint leaves, plus extra, to serve and 2 tsp fresh lemon juice in a small food processor. Season. Process until smooth.

Step 5

Place bhajis and mint sauce on a serving plate. Sprinkle with extra mint. Serve.
