Crock Pot Chile Colorado Recipe 

This restaurant-quality Chile Colorado dish is simple to make and yields tender meat in a rich, mild red chile sauce. For an alien meal, serve it with rice, beans, and tortillas!  

– ▢  6 dried guajillo chiles – ▢2 dried ancho chiles – ▢2 dried arbol chiles* – ▢1 small yellow onion, diced – ▢4 cups beef broth or chicken broth – ▢2 tsp dried oregano – ▢1 tsp ground cumin – ▢2 tsp garlic powder – ▢1 tsp sea salt, to taste

Chile Colorado Sauce: 

– ▢  2 Tbsp avocado oil – ▢3 lbs beef stew meat – ▢¼ cup gluten-free all-purpose flour** – ▢1 tsp sea salt – ▢½ tsp black pepper – ▢2 bay leave

Step 1

Preheat a large cast iron pan on medium-high with 2–3 tablespoons avocado or olive oil. Place the meat in a single layer on the hot skillet (two batches may be needed depending on size).

Rotate and brown both sides for another minute or two after 2-3 minutes. Plate and repeat with remaining beef. Put browned meat in crockpot.
