French Carrot Salad Recipe For Easter Day 2024

This French carrot salad recipe will make carrots exciting again! It's easy, zesty, slightly sweet, and lightly spiced with cumin. 

 – ▢  1 pound carrots, peeled – ▢ ¼ cup roughly chopped parsley or cilantro – ▢ 2 green onions, thinly sliced on a diagonal

 – ▢ 3 tablespoons extra virgin olive oil – ▢ 2 tablespoons lemon juice – ▢ 2 teaspoons honey – ▢ 1 teaspoon Dijon mustard – ▢ ½ teaspoon kosher salt – ▢ ¼ teaspoon ground cumin – ▢ ¼ teaspoon freshly ground black pepper

CARROT SALAD DRESSING

Step 1

Grate the carrots. Using either a box grater or the grater attachment on a food processor, grate the carrots. Place in a large mixing bowl.

Step 2

Add greens. Add the green onions and parsley to the mixing bowl.

Make the dressing. In a small bowl, whisk together the oil, lemon juice, mustard, honey, salt, and pepper.

Stir it all up. Pour the dressing on top of the carrot salad and stir to combine.
