Make a delicious Best Carrot Cake Recipe in just 12 steps 

This is my best way to make carrot cake at home! This cake is very simple to make, stays fresh, and has a simple cream cheese frosting on top.

Ingredient

2 cups all-purpose flour spooned & leveled (250 grams) 2 teaspoons baking powder 1 teaspoon baking soda 1 ½ teaspoons ground cinnamon ½ teaspoon ground ginger ¼ teaspoon ground nutmeg ½ teaspoon salt ¾ cup canola or vegetable oil (180ml) 4 large eggs at room temperature 1 ½ cups packed light brown sugar (300 grams) ½ cup granulated sugar (100 grams) ½ cup unsweetened applesauce (125 grams) 1 teaspoon pure vanilla extract 3 cups lightly packed grated carrots (300 grams)

Heat the oven to 350°F (180°C). Spray two 9-inch round cake pans with nonstick cooking spray and line the bottoms with parchment paper circles. This will simplify cake layer removal from the pan!

A large mixing bowl should be used to combine the flour, baking powder, baking soda, spices, and salt. The mixture should then be whisked thoroughly.

Oil, eggs, brown sugar, white sugar, applesauce, and vanilla extract should all be mixed together in a separate big bowl using a whisk.

Stir in grated carrots to the wet ingredients. Adding them now ensures they are properly mixed into the batter and prevents overmixing.

Mix wet and dry components just till mixed. Avoid overmixing batter! Overdeveloping gluten might make the cake dense and gummy. I promise no one wants that.

Evenly fill both cake pans with batter. Tip: Use a food scale to weigh cake batter for even layers.

Bake the cakes for 30–35 minutes until the tops are set and a toothpick inserted into the center comes out clean. After cooling somewhat in the pans, transfer the cake layers to a wire rack to finish cooling.

After beating the cream cheese until it is completely smooth, add the butter and continue to whisk until everything is thoroughly incorporated.

Add powdered sugar and vanilla extract last. If necessary, scrape down the sides of the mixing bowl to blend all icing ingredients.

Level cake layer tops. I recommend this cake leveler for this stage, but you may also use a large knife. It suits novices too!

Put one of the layers on a cake stand and spread out a little more than 1/2 cup of the filling on top of it.

Place the other cake layer on top and coat the sides and top with the remaining frosting. This technique works well with an angled spatula or spoon back!
