Meatless Grain Bowl Recipe

Made with tofu that has been "jerked" to perfection, this grain bowl does not contain any meat. An unexpected twist is brought about by the inclusion of roasted sweet potatoes, not to mention the fact that your taste buds will be ecstatic about the meal. 

Ingredient

– 2 cups white rice – 4 cups water – 1 large sweet potato, peeled and cubed – 3 tablespoons coconut oil or vegetable oil, or as needed, divided – 1/2 red bell pepper, sliced – 1/2 green bell pepper, sliced – 1/2 orange bell pepper, sliced – 1 (14 ounce) package extra firm tofu – 1 (15 ounce) can black beans, drained and rinsed – 1 teaspoon jerk seasoning, or to taste – 2 tablespoons jerk marinade

Boil rice and water in a saucepan. Cover and simmer on medium-low heat for 20–25 minutes until rice is tender and water is absorbed. Keep warm.

Heat the oven to 450°F (230°C). Stir 1 tablespoon oil into cubed sweet potatoes. Evenly distribute on a baking sheet.

Roast sweet potatoes for 15–20 minutes in a preheated oven until tender but not soft.

Add red, green, and orange bell peppers to a cast iron skillet with 1 tablespoon coconut oil over medium-high heat and sauté for 2–3 minutes. Remove from skillet and set aside.

Use the remaining 1 tablespoon coconut oil in the skillet. Add tofu evenly. Flip gently after 2 minutes of cooking. Cook tofu, turning occasionally, until edges are crisp, 6–8 minutes.

Carefully cover tofu with jerk marinade. Remove from heat when marinade caramelises tofu. Heat black beans in a microwave-safe dish for 2–3 minutes, stirring every 30 seconds. Rice, tofu, peppers, sweet potatoes, and black beans should be evenly distributed in grain bowls.
