Peanut Butter Sandwich Cookies Recipe For Easter Day 2024
These easy homemade Do-Si-Dos (aka peanut butter sandwich cookies) are made with simple ingredients and natural sugars.
– ▢½ cup natural peanut butter– ▢ ⅓ cup coconut sugar– ▢ 1 egg, whisked– ▢ 1 teaspoon vanilla extract– ▢ ¼ cup old fashioned rolled oats– ▢ 1 Tablespoon oat flour– ▢ 1 teaspoon baking soda– ▢ ¼ teaspoon sea salt

Preheat oven to 375°F.
Mix peanut butter, coconut sugar, and egg in a large bowl. Add vanilla, oats, flour, baking soda, and salt. Mix well.

With a 1/2 tablespoon, scoop cookie dough and roll into a ball. Press each cookie slightly on an ungreased baking sheet and bake for 8–10 minutes until the bottoms are lightly browned.

Remove and cool on baking sheet for 4-5 minutes, then transfer to wire rack to finish cooling.
Make peanut butter filling: Mix peanut butter, maple syrup, and oat flour while cookies bake.

After cookies cool, make sandwiches. Put peanut butter on one cookie's bottom and carefully place another on top. Sandwich all cookies. An odd number of cookies? Enjoy one while making them. 🙂

Keep leftover cookies in an airtight container at room temperature for 3-4 days, refrigerated for 5-7 days, or frozen for 3 months. Now serve crisp cookies. Get softer with age.
