Sauteed Carrots With Bacon Dijon Dressing Recipe For Easter Day 2024

These sautéed carrots tossed with a bacon Dijon dressing are irresistible! They're perfect for an easy weeknight dinner or holiday side dish. 

 – 4 pieces bacon, diced into ¼-inch piece 1 ½ pounds carrots, peeled and thinly sliced on a diagonal 2 tablespoons Dijon mustard 2 tablespoons honey or maple syrup 2 tablespoon apple cider vinegar ¼ teaspoon kosher salt freshly ground black pepper 1 tablespoon thinly sliced chive

Step 1

Heat a large skillet on medium-low. Stir often as the bacon cooks for 10–12 minutes until brown and crisp. With a slotted spoon, transfer bacon to a paper towel-lined dish. Remove all bacon fat from skillet except 2 tablespoons.

Step 2

Increase heat to medium-high. Cover the skillet and simmer the carrots for 3–4 minutes without stirring to caramelize the bottom.

Stir without the lid for 2–3 minutes. Stir in the crispy bacon, mustard, honey, vinegar, salt, and pepper for another minute.  r.

Garnish and toss with freshly chopped chives before serving. .
