Vegan BBQ jackfruit sliders are a fun and frisky appetizer or side dish.
–▢1 tablespoon olive oil– ▢2 large sweet potatoes, sliced into round– ▢2 14-ounce cans jackfruit– ▢2 teaspoons chili powder– ▢3/4 cup Barbecue Sauce– ▢3 stalks green onion, chopped

Cut sweet potatoes and lay on a large baking sheet. Add olive oil and sea salt. Hand-toss to coat sweet potato slices. Place slices in a single layer on baking sheet.

Preheat the oven to 400 degrees F.Drain the jackfruit and remove any hard bulby bits.

Over medium-high heat, lightly oil a medium skillet. Mix chilli powder and jackfruit. Stir occasionally for 2–3 minutes. Add barbecue sauce, boil, then reduce heat to medium-low.

Top the roasted sweet potato slices with bbq jackfruit, and top with easy cabbage slaw and chopped green onion.
