Sweet Potato Muffins Recipe For Easter Day 2024

Enjoy these cinnamon sugar-topped sweet potato muffins made with basic, healthful ingredients. So moist and fluffy, and so easy to create!  

1 ¾ cups whole wheat pastry flour, or all-purpose flour 1 teaspoon baking powder ½ teaspoon baking soda 1 ½ teaspoons cinnamon ¼ teaspoon ground ginger ½ teaspoon sea salt 1 cup sweet potato puree, or mashed sweet potato 2 large egg ⅔ cup coconut sugar ½ cup full fat Greek yogurt 3 Tablespoons avocado oil , or olive oil 1 teaspoon vanilla

1 Tablespoon coconut sugar ▢  ¼ teaspoon cinnamon

Step 1

Preheat oven to 350°F. Line a muffin tin with silicone or paper liners.

Step 2

Combine the flour, baking powder, baking soda, cinnamon, ground ginger and salt in a medium mixing bowl.

Whisk together the sweet potato puree, eggs, coconut sugar, greek yogurt, oil and vanilla in a large bowl.

Add the dry ingredients into the bowl with the wet ingredients and mix until just combined. There may be a few lumps, that’s totally fine. Just don’t over mix!

In a small bowl mix coconut sugar and cinnamon for the topping.

Divide batter evenly into muffin cups and top with coconut sugar cinnamon. Bake muffins until a toothpick inserted into one comes out clean, 18–20 minutes.

Step 7

Place the muffin tin on a cooling rack to cool. Once cool enough to handle, remove from the muffin tin and to cool completely on a wire rack.
