Carrot Halwa Recipe For Easter Day 2024
Serve this golden carrot halwa as part of a Middle Eastern feast.
– 500g carrots, coarsely grated
– 2 tbsp ghee
– 10 cardamom pods, crushed
– 750ml (3 cups) milk
– 330g (1 1/4 cup) palm sugar
– Pinch saffron thread
– 40g (1/4 cup) unsalted pistachio nuts, chopped, to serve
– Silver leaf, optional, to serve

Heat the ghee in a medium saucepan over medium-high heat. Add the cardamom and stir for 30 seconds or until aromatic.

Add the carrot. Cook, stirring for 3 minutes or until slightly wilted.

Add the milk to the saucepan and bring to the boil. Simmer, stirring constantly, for 5 minutes.

Reduce heat to low and simmer, stirring occasionally, for about 1 hour or until the liquid is reduced by about one-third.

Add the sugar and saffron to the saucepan. Increase temperature to medium. Cook, stirring often, 40 minutes or until mixture thick and glossy.
