Carrot Halwa Recipe For Easter Day 2024

Serve this golden carrot halwa as part of a Middle Eastern feast. 

 – 500g carrots, coarsely grated – 2 tbsp ghee – 10 cardamom pods, crushed – 750ml (3 cups) milk – 330g (1 1/4 cup) palm sugar – Pinch saffron thread – 40g (1/4 cup) unsalted pistachio nuts, chopped, to serve – Silver leaf, optional, to serve

Step 1

Heat the ghee in a medium saucepan over medium-high heat. Add the cardamom and stir for 30 seconds or until aromatic.

Step 2

Add the carrot. Cook, stirring for 3 minutes or until slightly wilted.

Add the milk to the saucepan and bring to the boil. Simmer, stirring constantly, for 5 minutes.

Reduce heat to low and simmer, stirring occasionally, for about 1 hour or until the liquid is reduced by about one-third.

Add the sugar and saffron to the saucepan. Increase temperature to medium. Cook, stirring often, 40 minutes or until mixture thick and glossy.

Serve warm or cold sprinkled with pistachios and silver leaf if using.
