Creamy Chicken Boursin Orzo Bake Recipe

For busy nights, this creamy chicken Boursin orzo bake comes together quickly in one pot. Dinner takes about an hour with minimal prep and 40 minutes of hands-off oven time. 

Ingredient

– 1 1/2 pounds boneless skinless chicken breast – 2 teaspoons Cantanzaro herb – 1 teaspoon salt – 2 tablespoons olive oil – 2 tablespoons unsalted butter – 1 shallot, minced – 6 cloves garlic, minced – 2 cups orzo pasta – 2 cups chicken broth – 1 3/4 cups milk – 1/4 cup whipping cream – 1/3 cup sun-dried tomatoes, cut into short, thin strip – 1 (5.2 ounce) package Boursin® Garlic and Fine Herbs Cheese – 2 cups chopped spinach

Heat the oven to 400°F (200°C). Season chicken breasts on both sides with Cantanzaro herbs and salt.

Heat olive oil and butter in a deep dish cast iron skillet or Dutch oven on medium-high until shimmering. Add chicken in a single layer and brown for 3 minutes per side. Keep warm on a plate.

In the same skillet, add shallot and garlic. Cook 30 seconds until fragrant. Stir oil into orzo.

Add chicken broth, milk, whipping cream, and sun-dried tomatoes. Place a Boursin cheese wheel in the skillet's centre orzo mixture. Return chicken to skillet; cover.

Bake for 40 minutes in the preheated oven until orzo is tender but firm and chicken is no longer pink in the centre and juices run clear.

An instant-read thermometer in the centre should read 165 degrees F (74 degrees C). Put chicken aside and add spinach. Stir spinach for 1 minute to wilt. Serve now.
