This chia seed pudding recipe is the perfect breakfast or snack to meal prep for the week. It's creamy, satisfying and loaded with protein and fiber.
– ▢ 4 Tablespoons chia seeds– ▢ 1 cup almond milk– ▢ ½ Tablespoon maple syrup, honey or sweetener of choice*– ▢ ¼ teaspoon vanilla extract, optional– ▢ Toppings of choice: fresh berries or other fruit, granola, nut butter, etc

Combine the chia seeds, milk, maple syrup, and vanilla extract, if desired, in a mason jar or bowl. To ensure that everything is combined, cover the mason jar and shake the mixture.

Leave the chia pudding mixture for 5 minutes, stir/shake again to break up clumps, cover, and chill to "set" for 1-2 hours or overnight. Chia pudding thick. If too thin, add another tablespoon of chia seeds and freeze 30 minutes.
