Roll peanut butter cookie dough into a smooth ball using a tablespoon or tiny cookie scoop. Add two teaspoons of peanut butter at a time to moisten dry dough. Roll cookies in cane sugar on a platter.

Put cookie dough balls in even rows on the baking sheet. Indent the middle of the cookie dough ball with your index finger or ¼ teaspoon.Baking cookies takes 11-13 minutes. Place baked cookies on a cooling rack to finish cooling.

Place chocolate chips and coconut oil in a small microwave-safe bowl after baking. Stir after every 30 seconds until chips are mostly melted. Stir smooth. Put melted chocolate in a ziplock or piping bag. Cut the ziplock bag corner to make a little hole. Fill cookie centers with chocolate.
