Healthy Morning Glory Muffins Recipe

Breakfast glory muffins—flourless! Low-sugar, dairy-free muffins are a healthful breakfast or snack. The family loves these nutritious muffins with grated carrot, apple, pecans, and raisins! 

 – 2 cups rolled oats – 2 ripe bananas 1 cup mashed – 2 large egg – 2 Tbsp avocado oil – 2 Tbsp pure maple syrup – 2 tsp pure vanilla extract – 1 tsp apple cider vinegar – 1 cup grated carrot – 1 cup grated apple – 2 tsp baking powder – ¼ tsp baking soda – 1 tsp sea salt – 1.5 tsp ground cinnamon – 1/2 cup unsweetened shredded coconut optional – ½ cup raw pecans or walnuts chopped – 2/3 cup raisin

Step 1

Preheat the oven to 350 degrees Fahrenheit and line a muffin tray with muffin liners.

 Grate the carrots and apple with a box grater or food processor until you have 1 cup of each.

Blend the oats in a high-powered blender or food processor for 30 seconds on high until they resemble flour.

Mash bananas in a large dish until creamy. Mix the eggs, avocado oil, pure maple syrup, apple cider vinegar, and vanilla essence until completely blended.

Stir in the grated carrot and grated apple.

Oat flour, shredded coconut, baking powder, baking soda, sea salt, and cinnamon should be mixed in with the wet ingredients. Stir in chopped pecans and raisins.

 Place the muffin tray on the center rack of the preheated oven and bake muffins for 25–35 minutes until golden brown, risen, and clean (my take 25 minutes).

Cool the muffins before peeling. When you peel them warm from the oven, most of the muffin sticks to the paper.

Enjoy these delicious muffins warm with a drizzle of honey and a cup of coffee or tea.
