Smoky Aussie Beans Recipe For Easter Day 2024

Loaded with beans, this hearty dish is high in fibre but still has all the flavour you want. 

 – 1 tbsp extra virgin olive oil – 1 red onion, finely chopped – 125g middle bacon rashers, trimmed, chopped – 300g beef mince – 3/4 tsp dried chilli flake – 1 tsp smoked paprika – 400g can Coles Cannellini Beans, drained, rinsed – 555g can baked beans in bbq sauce – 2 tsp brown sugar – 2 tsp Dijon mustard – 1/3 cup finely chopped fresh flat-leaf parsley – Thickly sliced bread, toasted, to serve

Step 1

Heat oil in a large saucepan over medium-high heat. Add onion and bacon. Cook, stirring, for 5 minutes or until onion is tender.

Step 2

Add mince. Cook, breaking up mince with a wooden spoon, for 7 to 8 minutes or until browned.

Add chilli and paprika. Cook, stirring, for 1 minute or until fragrant. Add cannellini beans, baked beans, 1⁄2 cup water, sugar and mustard.

Bring to the boil. Reduce heat to low. Simmer for 5 to 7 minutes or until thickened. Stir in half the parsley.

Sprinkle beans with remaining parsley. Serve with toast.
