Turmeric Chicken Sheet Pan Dinner Recipe

An easy one-pan clean dinner recipe with immunity-boosting turmeric chicken and vegetables 

– ▢  4 large carrots, peeled and chopped – ▢1 large crown broccoli, chopped into floret – ▢2 zucchini squash, chopped – ▢1 medium yellow onion, chopped – ▢1 1/2 pounds boneless chicken thigh – ▢3 Tbsp avocado oil, divided – ▢1/2 tsp ground turmeric – ▢1/2 tsp ground paprika – ▢1/4 tsp sea salt

Step 1

Preheat the oven to 425 degrees F.  On a sheet pan, drizzle 2–3 tablespoons avocado oil over chopped vegetables. Toss veggies with sea salt and oil using your hands.

After lightly coating chicken thighs with avocado oil, sprinkle ground turmeric, paprika, and sea salt. Hand-rub oil and seasonings on chicken thighs.

Step 3

Place chicken thighs on the baking sheet atop the vegetables.

Step 4

Bake 40 to 45 minutes, stirring the vegetables once half-way through, until veggies have reached desired done-ness and chicken is cooked through.
