Ingredients

  • 1 Tbsp unsalted butter*
  • 3 Tbsp creamy peanut butter
  • 2 Tbsp pure maple syrup
  • 1 egg yolk
  • ½ tsp pure vanilla extract
  • 2 ½ Tbsp gluten-less all-purpose flour or regular all-purpose flour
  •  tsp sea salt

Instructions

  1. Melt the butter in a mug that is safe to use in the microwave by heating it for 20 to 40 seconds. Note: I make the cookie dough in a small bowl or measuring cup first, and then I move it to a mug or ramekin that can go in the microwave using a rubber spatula. It’s simple to complete the procedure with just a mug, which means minimal cleanup.
  2. When the mixture is properly blended, add the peanut butter, pure maple syrup, egg yolk, and vanilla essence (wet ingredients). Note: To make it easier to stir, if your peanut butter has been lying in the refrigerator for a long time, microwave it with the butter.
  3. Add the sea salt and gluten-less all-purpose flour (dry ingredients) and stir until a smooth dough comes together. It’s typical for the mixture to be rather thin and unrepresentative of cookie dough. You can also incorporate some chocolate chips into the cookie batter or just sprinkle them on top.
  4. Use the microwave’s default setting of high heat for 45 to 60 seconds, or until it has set up. I suggest 45 seconds to start, and maybe microwave longer if necessary. It will be really hot at first, so let the mug cool for a minute or two before consuming the peanut butter cookie! The cookie will melt in your tongue even though its texture looks a little crumbly. Serve microwaveable peanut butter cookies with a glass of milk or a scoop of ice cream.
