Ingredients

  • 1 (2.5 to 3- pound) boneless pork butt roast
  • Sea salt and pepper
  • 2 Tbsp avocado oil
  • 1 large yellow onionsliced
  • 1.5 lbs potatoes I use baby gold potatoes
  • 3 large carrotschopped into large chunks
  • 8 ounces mushroomschopped, optional
  • 5 cloves garlicminced
  • 3 sprigs fresh thyme
  • 3 cups beef broth
  • 1 cup red wineoptional

Instructions

  1. After taking the pork roast out of its packing, arrange it on a big dish or chopping board. Should the roast be accompanied by netting, remove and dispose of it. Using paper towels, remove any extra moisture from the roast. Season the roast all over with sea salt and pepper.
  2. In a sizable cast-iron pan set over medium-high heat, preheat the avocado oil. Sear for six minutes, then turn and continue to sear for an additional three to six minutes, or until a golden brown crust forms on both sides.

Put the slow cooker’s lid on tightly and cook the pork roast on High for 5 to 6 hours or on Low for 8 to 10 hours, or until it is fork-tender.
  4. After taking the roast out of the slow cooker, place it on a chopping board. To make shredded pork, either shred the roast with two forks or chop it into chunks with a sharp knife before serving. Enjoy the pork roast served with the slow cooker’s vegetables and juices!
