Ingredients

  • 3 large ripe bananas 1 ½ cups mashed
  • ½ cup creamy almond butter
  • 1 1/2 cups quick oats
  •  cup cocoa powder
  • 1/2 cup to 1 cup chocolate chips optional
  • ¼ tsp sea salt to taste

Optional Additions:

  • 2 Tbsp pure maple syrup
  • 1 tsp pure vanilla extract
  • 1 tsp ground cinnamon

Instructions

  1. Heat the oven to 350 degrees Fahrenheit and place parchment paper inside an 8-inch square baking pan.
  2. In a large basin, mash the ripe bananas until creamy. Add the pure maple syrup and almond butter, if using, and stir until the wet ingredients are thoroughly blended.
  3. To the mixing bowl, add the cocoa powder, sea salt, quick oats, and cinnamon (if using). Stir until a dense batter is formed. If you are adding chocolate chips, stir them in.
  4. Spread the chocolate banana oat mixture evenly across the baking dish that has been prepared. Garnish with additional chocolate chips, if preferred.
  5. Bake for 12 to 16 minutes, or until the sides are crisp, on the centre rack of a preheated oven (I bake mine for 15 minutes).
  6. Before slicing and serving, let the chocolate muesli bars cool to room temperature.

Notes

Use peanut butter or sunflower seed butter in place of almond butter. If you aren’t adding chocolate chips, I recommend adding 2 to 3 tablespoons of brown sugar to make the bars sweeter. The sweetness comes from the combination of the ripe bananas and the chocolate chips so without the chocolate chips you will need sweetener of some kind. Nutrition Facts based on using sugar-less chocolate chips.
