Ingredients

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 3 large cloves garlic minced
  • 1 jalapeño diced and seeded
  • 3 cups chicken broth
  • 14 ½ ounces crushed tomatoes
  • 14 ½ ounces can black beans rinsed & drained
  • 10 ounces canned diced tomatoes with chiles such as Rotel
  • 2 chicken breasts boneless, skinless
  • 1 cup corn drained if canned
  • ¼ cup cilantro chopped
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 lime juiced
  • 1 avocado sliced, for garnish

For the Tortilla Strips

  • 6″ corn tortillas cut into ¼” strips
  • ¼ cup vegetable oil
  • salt

Instructions

  1. Separate the tortillas into pieces that are ¼ inch wide. Warm up ¼ cup of vegetable oil in a small pan over medium-high heat.
  2. Step by step, add the tortillas to the oil. Fry them for about one minute on each side, until they are golden brown. Take it out of the oil and let it drain on a paper towel. Add salt to taste while still warm.
  3. Put olive oil in a big pot and heat it over medium-low heat. Put the jalapeño, onion, and garlic in the pot. Cook for three to four minutes, until the onion gets soft.
  4. The chicken soup, black beans, corn, lime juice, ground cumin, cilantro, and chili powder should all be added at this point. Use a stir to mix.
  5. Bring the soup to a boil over high heat after adding the chicken breasts. Turn down the heat to a low level and cook the chicken for 20 minutes with the lid off.
  6. Take the chicken out of the pot and use two forks to shred it. Put the chicken shreds back into the pot and cook for three more minutes. Add salt and pepper to taste.
  7. Add tortilla pieces, lime wedges, and sliced avocado to bowls of soup.
