Ingredients

  • 2 cups rolled oats
  • 4 Tbsp protein powder of choice optional*
  • 2 tsp baking powder
  • 1 tsp ground cinnamon optional
  • ½ tsp sea salt
  • 2 large eggs
  • 2 egg whites ⅓ cup
  • 1 cup milk of choice**
  • 2 Tbsp pure maple syrup***
  • 1 pint fresh blueberries

Instructions

1. The oats should be transferred to a high-powered blender or food processor and blended for sixty seconds, or until a flour is formed, whichever comes first.

2. To the blender, add the protein powder, baking powder, cinnamon, and sea salt. Blend for ten seconds, or until all of the dry ingredients are combined, whichever comes first.

3. Put the eggs, egg whites, milk, and pure maple syrup into a large mixing basin, and mix everything together until all of the liquid ingredients are incorporated by the mixture.

4. Mix the dry ingredients thoroughly with the liquid components in the bowl until a thick batter is formed. Pour the dry ingredients into the bowl.

5. The batter should be allowed to settle for ten minutes while being stirred occasionally.

6. When you are ready to create the pancakes, heat your preferred cooking oil in a large skillet, frying pan, or pancake griddle that does not adhere to the surface over medium heat. Wait a few minutes for the skillet to reach the desired temperature.

7. The batter is measured to be ¼ cup, and then it is poured onto the hot griddle. To the pancake batter, sprinkle individual blueberries, adding as many or as few as you prefer. You can choose how many blueberries to add. It should be cooked for two to three minutes, or until a large number of bubbles develop on the surface of the batter and the sides start to become solid. Cook the pancakes for a further one to three minutes, or until they have reached the desired level of doneness and have a golden brown colour.

8. Continue doing so with the remaining batter. In the event that the pancakes are taking an excessive amount of time to cook, it is highly recommended that you either increase the heat to medium high or decrease the heat if they are cooking too rapidly.

9. Have pancakes with the toppings of your choice, and savor the experience! Honey or pure maple syrup, a pat of butter, and additional blueberries are some of the toppings that I enjoy serving with these. This meal can also be enjoyed with additional sources of protein, such as Greek yoghurt, cottage cheese, or your preferred animal protein, for a more substantial increase in the amount of protein you consume.
